
Jane and Sue Chocolate
When you step into Jane and Sue Chocolate Studio in Stanley Bridge, PEI, you’re greeted by the irresistible aroma of caramel swirling on the stove and cookies baking in the oven.
Sisters and co-owners Jane Woodley and Sue Humby have created a space that feels as warm and inviting as the freshly brewed coffee and specialty hot chocolate they serve. Grab a cup and take your time exploring the shelves filled with their handcrafted creations.
This season, they’re introducing festive specialties that are almost too beautiful to eat. Among them are new bonbons that Jane says “taste like Christmas!” Wrapped in 45% single-origin milk chocolate, these delights feature a torched cinnamon caramel ganache layered with spiced Biscoff cookie crumbs. Sue has also crafted stunning chocolate ornaments—perfect for the tree, but even better to enjoy. And don’t miss their whimsical take on the Polar Express: a holiday train packed with decadent treats.
Every piece is a work of art. Their tempered chocolate becomes a canvas for vibrant colours inspired by the breathtaking PEI landscapes they encounter on daily walks with their dogs. “It’s hard not to be inspired by a spectacular sunrise or sunset over the water, fields, and forests,” says Sue.
After years in careers focused on grayscale—Jane as a veterinary ultrasound technician and Sue as a cardiac ultrasound operator—the sisters wanted something brighter. “We’re privileged to be part of so many celebrations in people’s lives,” Jane shares. Today, their creations delight locals, tourists, and chocolate lovers as far away as Japan, Australia, and Switzerland.
Through artisan bonbons, chocolate bars, and baked goods, they share a piece of themselves with
every customer. “Bringing joy through chocolate is the greatest reward,” says Jane.
Choosing a favourite is tough, but Jane narrows hers down to hazelnut praline and vanilla caramel hazelnut with espresso crunch. Sue opts for a classic: pecans with brown butter caramel. Whatever you choose, they encourage you to savour every bite and enjoy the layers of flavour.
Their journey hasn’t been without challenges. When Jane discovered she had a wheat allergy, they had to pivot from the original plan of pastries to artisan chocolates and gluten-free baked goods.
Rising ingredient costs since opening in 2020 during a global pandemic forced tough decisions, including finding new suppliers and adjusting prices—without compromising quality.
Through it all, they’ve persevered together. “Entrepreneurship can be exhausting but also energizing,” they admit, hoping their story inspires others. Sue adds, “If you have an idea, CBDC offers helpful courses, professional guidance, and capital.” Thanks to a loan from CBDC Central PEI, they turned their passion into a thriving business. “CBDC has been accessible and supportive from the very beginning,” they say.
Building on the demand for their product, Jane and Sue are currently developing a second location,
scheduled to open in early 2026. This will mark a significant milestone in their journey and add a new chapter to their sweet success story.
